Donald K. Layman, Ph.D.

Dr. Donald Layman is the Director of Research for the Egg Nutrition Center. Dr. Layman is also Professor Emeritus at the University of Illinois at Urbana-Champaign after a 30-year career of teaching and research in the Department of Food Science and Human Nutrition and Division of Nutritional Sciences.

He is recognized for his research on amino acid metabolism, nutrition requirements during exercise, and for his work with higher protein, reduced carbohydrate weight loss diets. Dr. Layman currently serves on editorial boards of Nutrition and Metabolism, the Journal of Nutrition Education and Behavior, and the Journal of the American College of Nutrition.

Dr. Layman earned his B.S. and M.S. degrees in chemistry at Illinois State University and completed his doctorate in human nutrition and biochemistry at the University of Minnesota.
